Afanassi Grigoriev is an aboriginal from Siberia (Even Tribe). Born in Moscow, Russia, and now living in Toronto. Afanassi is an emerging artist, who had displayed artworks at Outreach by Gallery44, Woodland Cultural Centre, and Dancing Through time by MacLaren Art Centre. His artistic media extends from drawing with pencil, sculpting with clay, painting, to photography. In September of 2005, he will be attending his first year at the Ontario College of Art and Design to study illustration. Afanassi has worked at 7th Generation Image Makers for a year and in the summer of 2005 he participated in a video project, writing, producing and directing his own short video, becoming a full time member of United Aboriginal Productions.

Professor Alexandra Grigorieva in Oxford Symposium 2006: Eggs: the fascination of foam
Eggs have long been an incentive to chefs' creativity. The ancient Roman
Apicius recipes (1st-4th century CE) already show four classic ways of cooking eggs,not to mention numerous dishes thickened or garnished with eggs. Moreover the sophisticated technique of using egg-whites separately for light soufflé dishes was popular as early as 6th century CE in different regions of the former Roman Empire (cf. Anthimus, Alexander of Tralles,Saint Isidore of Seville). Those dishes were called aphraton or spumeum('foamy' in Greek and Latin respectively)and were balls of chicken or fish mousse (with plenty of egg-whites incorporated) poached and served in a sauce, a savoury lookalike of floating island. The delicious foamy texture - wasn't Aphrodite herself born from the foam? -was too addictive to disappear from European kitchens for long with the end of Antiquity. So in my paper I am trying to survey the progress of the 'egg foam family' dishes through the ages and the diversity of their names,recipes and connections, from English apple snow, French meringue and Italian zabaione to Russian gogol-mogol, beze and zefir.
